Barbecue 101

Last weekend my Dad and I traveled to Memphis and Arkansas for our annual BBQ adventure.

We usually travel just as a family, but this year we decided to go on an organized trip lead by legends of the food  world, Jane and Michael Stern.  They are the authors of numerous Road Food Books and Magazine articles. If there is good food to be found, they can guide you towards it.

We traveled on the trip with Mr. and Ms. Stern in Connecticut last year, and we loved it so much we decided to come all the way down to Memphis and Arkansas to chow down on some of the best food in the country.

About 35 people go on the food trip, and all of them are foodies like me. They come from from all corners of the country and bring with them a common love for fabulous food. They are all very kind, and I have kept in touch with many of them over the last year. On the trip we devoured a nice selection of treats and by the end of the trip, we literally had to be rolled out of each restaurant.

During our two and a half days in Memphis and Arkansas we had 14 delectable meals including: crispy, juicy, moist fried chicken, succulent, tender ribs that were smothered with tangy, warm sauces and fell right off the bone, fantastic, crunchy fried catfish, crisp, oily, perfectly browned fried pies, and of course the greatest of them all, hot, meat enhanced baked beans (the perfect representation of the food at every barbecue restaurant).

Memphis and Arkansas both offer their versions of delicious classics, and I can not wait to talk to you about them in my following articles.
